Easy cakes to make for St Patrick’s Day!
Irish flag fairy cakes – when cut will show the colours of the Irish flag.
- 4 oz unsalted butter – room temperature
- 6 oz Caster Sugar
- 8 oz self-raising flour
- ½ tsp baking powder
- 2 medium eggs
- 1 tsp Vanilla extract
- 1 drop green food dye – be careful, a drop at a time, until you get the colour you want
- 1 drop orange food dye – I could not get orange, so I mixed a drop of yellow with a drop of red food dye
You don’t have to use an electric whisk to make these cakes but it is quicker.
Preheat the oven to 180°C. Put paper bun cases in a 12 bun tin.
Cream the butter and sugar together, add the vanilla extract and beat until light and fluffy. Beat the eggs and add in a bit at a time and mix in well. After all the egg has been mixed in sift the flour and baking powder into the mixture. Mix well until the mixture turns pale. If the mixture is a bit stiff, add a little of the milk. You may not need to use all the milk.
Divide the mixture into three bowls. In one bowl add a drop of the green food dye and mix in. Add orange food dye to the second bowl and mix in.
Divide the mixture evenly between the bun cases, spooning the green mixture first, plain mixture and orange mixture on top. Bake in the oven for 15-20 minutes.
After 15 minutes they will have risen, at this point, check they are cooked by putting a skewer through one of the cakes, if the skewer comes out clean they are cooked. If not, leave in the oven for a further 5 minutes.
When ready, take out of the oven and leave in the tin until cooled. When cooled transfer to a wire rack and decorate with icing
